Catholic and atheist wedding planning, friend or priest/minister to marry us?

Please help. Me and my fiance are planning our wedding for May 2012, and have run into our first snag. We never argue, just talk things out, but are having difficulty reaching a compromise for this one, so just thought some outside perspective would help. I am Catholic, though not the best catholic. My fiance is atheist. She wants her friend j to marry us because he was her first friend when she moved out here and he is the one who introduced us. I also think it would be cool to have him wed us, but Id rather have a preist/minister do it, just because it seems more official to me and shares my families and my beliefs. Shes okay with having a minister/priest, but is weary on if they will do it number one, and that its not her beliefs number two. so were back to the drawing board. I was thinking maybe having j read a prayer to incorporate what i want while she still gets j to marry us. so i just wanted some more opinions or suggestions to work something out, any help is appreciated! Thanks.
